Carrot Ginger Soup

Today I am sharing with you this recipe that is a delicious mix of fresh veggies, spices and lots of super hydrating goodies. Raw vegan foods are great for summer time simply because they are so hydrating, easy to digest and nourishing for our amazing and beautiful bodies. Raw vegan nutrition is a fantastic choice for moments when we would like to both hydrate and nourish our bodies, find something that is both easy to make and easy to digest at the same time.  Raw vegan choices are easy to make and we can always adapt them to our own needs, wishes and desires. By simply keeping ourselves informed and open to new ideas at all times, we are then truly able to live life to its fullest. YUM!

Here are the ingredients that we are going to need for todays super delicious and nutritious carrot ginger soup:

2 -3 medium carrots

a few small pieces of ginger depending on how spicy you want your soup to be

1 red bell pepper

2 – 3 medium tomatoes

optional some cloves of garlic for extra spice

2 medium avocadoes for extra creamy texture

juice of 1 – 2 lemons for a fresh and tasty touch.

We use a blender to mix all the ingredients together and we blend them until we get a smooth and creamy consistency. When the desired consistency is reached we can take the soup out of the blender and pout it into the serving bowls of choice. For extra crunchiness I have added some chopped carrots and for some more spice and a good looking aspect I have topped the soup in the end with some arugula leaves and some flaxseeds for extra fiber. Yum!
