I have to admit I just love raw cakes, I mean I used to love sweets in general and also eat a lot of them, all kinds of flavours and texture, I just felt so good by just simply eating them. The traditional sweets are filled with sugar of course and some with all kinds of additives and nasty stuff like that, but what I find the worst is that if yoy just keep eating them it feels like you constantly want more and more, so basically they are addictive, due to the sugars in them and of course other stuff, but they also do damage to the body, raising blood sugar levels and messing up with our energy levels, on and on. Since I started embracing the raw vegan lifestyle, with actually started with raw desserts, I just find it to be a relief to be able to enjoy something sweet but also feel nourished and satisfied.
The raw sweets and desserts recipes are really filling and after eating them you just feel satiated and not like you want to eat more and more, which is really great. In the last few years I do not even feel anymore like a need sweets or dessert every single day, but maybe a few times per week or even less than that. But even if I want something sweet or I am craving some dessert, I do not feel guilty anymore, simply because I know that the choices that I am making know are not just nourishing, but also healthy and fullfilling. Yum! That is why I am sharing with you today a super simple and easy to make raw vegan cake recipe which you are just going to love and adore!

Here are the ingredients that we are going to need for this super simple and easy to make, yet delicious and nutritious raw vegan cake recipe:
1 cup coconut flakes
1 cup dates or date paste
1/ 2 cup mix of brazil nuts and cashews.
We use a food processor to mix all the ingredients together until we get a sticky and chunky consistency which is actually going to be the base of our delicious cake. After spreading our cake base into a cake pan of choice we cna move on to the next step: making our creamy and delicious, fiber filled cake cream layer. Yum!
For the cream layer of our delicious and nutritious raw vegan cake we are going to use the following ingredients:
1 cup cashews, prefferably soaked in advance for 1 – 2 hours
1/ 2 cup dates
3 – 4 tbsp psyllium husk to thicken our cream
1 cup water or nut milk.
We use a blender to mix all the ingredients together (except for the psyllium husk) until we get a smooth and creamy consistency. Them we add the psyllium husk and stir it well until it thinkens to the dessired consistency. We can add more or less of those amazing filled with fiber goodies until we reach our desired consistency. Then we can pour this amazing delicious and nutritious cake cream layer on top of our cake base layer.
Finally we add some more coconut flakes and sprinkle them on top of our cake and if we wish so, we can also add some halved dates for even an even more good looking cake.
