Snowball Cookies

I absolutely love and adore the world of raw vegan cookies and cakes, smoothies and desserts and all the goodness that those recipes provide. Over the years I have created and explored so many recipes, that sometimes I might actually get stuck asking myself what else could I make to be a new mix of flavours that tastes absolutely divine, but still somehow I find my way back towards my creative and playful self and I get my hands onto it and what turns out to be is so delicious and so nutritious that you could just not resist it.

I love the world of raw vegan goodies as they are so fulfilling and so much nurturing and nourishing when compared to traditional or fast food options, I also find them to be an amazing opportunity to be creative not just in the kitchen but when it comes to they ways in which we approach ourselves and our lifestyles, we way in which we care and are being playful with ourselves as well as with our inner child as we allow that energy to shine and heal us, take us back to being truly and fully ourselves, authentic and present, just simply enjoying the moment as it unfolds. Therefore I find todays recipe to be not only playful for winter times, but also times when you feel inspired to try something new and make it yourself.

So here are the ingredients that we are going to need in order to make those super delicious and nutritious snowball cookies for the holiday season or for any moment that you might be finding yourself wanting to celebrate yourself or even life itself:

Coconut Layer:

1 cup coconut flakes

1/2 cup coconut milk (with high fat content, for example coconut cream or canned coconut milk)

Mix together until you get a thick cream like layer, add more coconut flakes or milk if necessary to adjust the texture to your desired texture of choice.

Inside Cookie Layer:

1/2 cup date cream or whole dates

1 cup nuts of choice or nut flour of choice mixed with coconut flakes

Mix the nuts with the dates by using a food processor if they are whole, or by using your own hands if you have date cream and nut flour on hand, and just process the mixture until it gets all incorporated and has a sticky and thick consistency.

Now you can form your cookie balls by using the cookie layer, and on top of doing this, roll them at the end through the coconut layer and gather them all on a plate of your choice. Allow to sit in the fridge for an hour or so in order to get a firm texture and then enjoy!

I truly believe that when we take care of our bodies and nourish ourselves with the most nutritious and fulfilling plant based foods available to us at all times, then we are really able to reach our full potential and live life to its fullest.
