As you already know, I just love raw vegan and vegan desserts and that is the part of this amazing and loving lifestyle that attracted me in the first place, so while I keep testing and adapting to changes over the years and over different seasons of my life, I also keep coming up with new amazing, nutritious and delicious recipes for lovely desserts that are just not only super cute, but also satisfying and fulfilling at the same time. I just love it! Today is all about a lovely pudding, with some coconut yogurt, delicious carob, sweet and sour cherries and of course some chia seeds for lovely texture and as great source of fiber and good healthy fats.
For this recipe, we are going to need the following ingredients:
fresh or frozen cherries
coconut or any other veggie milk
vegan yogurt
carob powder
chia seeds
coconut flour (added fibre and protein source)
dates or any other sweetener of choice
cinnamon, vanilla, spices of choice.


We mix all the ingredients for the pudding together, except for the cherries and the yogurt with we are going to use as toppings, and we can use a food processor or just a mixer, and mix them well until we get the desired consistency. We allow for the chia seeds to soak up all the liquid, and if we want we can have 1/2 half as a white batter and just add the carob at the end like I did in order to have a chocolate and cream texture for our pudding. It simply looks delicious and it tastes amazing too. We can serve it right away of refrigerate for 2 hours for a firm texture. We can also save this for later or make multiple batches. Mine usually lasts for up to 2 days in the refrigerator in great shape. We add the toppings and of course, if desired, we can also sprinkle some more toppings, such as coconut flakes, other nut flakes, spices. For mine, I used cherries, vegan yogurt and cinnamon powder.
