It’s been a while since my last post for the blog, but here I am, back to what matters most, some sharing and caring for my own creative health and wellbeing project. As a student of life I do understand that everything happens for a reason so even if I am not posting for a few months I do know at the core of my being that some other projects or tasks may be in focus for the moment but I am always coming back to what I love the most: my safe space, my safe place. I did not prepare so much of the food I have been eating by myself lately so that could also be a reason why I am not posting new recipes and meal planning ideas, but it’s ok. There are seasons in life when our focus is driven towards some areas of life that may be needing out attention but as long as we are still taking great care of ourselves in a healthy , balanced way, its ok to eat in a different way. I also do not want to be so focused on perfection and things like that and in the last months and even years I got better at not needing all the food to be prepared by myself and just enjoy the moment more. Eating healthy is supposed to be fun and that’s what matters.

Therefore, today I am going to share a delicious and nutritious recipe that I have made by myself lately, still including my favorite color, my favorite berries and amazing healthy and nutritious ingredients that I just love to have in hand. Chia seeds are a great source of omegas as well as a great source of healthy fats, they do make a perfect texture for a healthy pudding, by simply soaking them in liquid. I love blueberries and blackberries so for this recipe I used a combination of both and of course cashews are great and versatile as a great source of vegan protein and healthy fats. Here are the ingredients that we are going to need for this amazing and colourful chia pudding recipe:
1-2 cups of vegan nut milk of choice
depending on how many servings of pudding you would like to prepare
1/2 cup to 1 cup of frozen berries of choice
1-2 tbsp psyllium husk for extra fiber
3-4 tbsp chia seeds
cashews for topping
sweetener of choice: dates, agave nectar, fruit juice, raisins
optional: coconut flakes, maca powder, other superfoods of choice, cinnamon, vanilla, nutmeg.

We mix all the ingredients together, except for the toppings of course, and then we allow them to sit until we get a thick and creamy pudding like consistency. For the berries and the dried fruits, if we are using any as sweetener, we have two choices: we can either blend them into the vegan milk and then add the rest of the ingredients, as I did for my pudding, or we can just mix them into the vegan milk as a whole ingredient. It is still going to get some color and texture, as well as a sweet taste. After the pudding is ready we can just serve it right away or keep it in the fridge for later servings for up to approximately 2 days, it might loose some texture, but it is still going to be a great meal or snack to be served at home or on the go.

Making healthy and fulfilling choices on a day to day basis is a habit just like any other habit and it requires repetition in order to became second nature, but as soon as our bodies and our minds get used to the new habit, then everything unfolds naturally, in a healthy, balanced way. I truly believe that when we take care of our bodies and nourish ourselves with the most nutritious and fulfilling plant based foods available to us at all times, then we are really able to reach our full potential and live life to its fullest.
