This week I just decided to spice up things a little bit when it comes to my daily salads, as I have been recently not been so creative and they looked a little bit sad, they were still tasty, but not as colourful as this one that I am going to share with you today. As always, we do not need fancy or pricy ingredients to make our food plates look absolutely amazing and taste amazing too. Salads are just a great way to get your greens for the day pretty each and quick to make, and also filled with color and joy. Salads are a good source of nutrients, fibre, vitamins and minerals, and can be served both as a lunch as well as a wonderful dinner choice. Feel free to replace any ingredients that you are not so fond of, with others that you prefer and experiment towards finding and testing out new textures every single time.

For this super colourful salad mix recipe I have used the following ingredients:
a mix of greens 1-2 hands full
broccoli 1/2 cup
1 small mandarine
1/2 cup chopped tofu
a mix of green olive paste and Kalamata olive paste
3-4 radishes
2-3 celery stalks
parsley
a mix of olive oil and flaxseed oil
a few cranberries to sprinkle on top.
We mix all of the ingredients in a large bowl of choice and then we can serve it right away, or refrigerate for approximately 24 hours for a later serving, I would recommend that if you are not serving it right away, to keep the oil and the olive paste aside until serving so that it does not loose its crispy texture.

Making healthy and fulfilling choices on a day to day basis is a habit just like any other habit and it requires repetition in order to became second nature, but as soon as our bodies and our minds get used to the new habit, then everything unfolds naturally, in a healthy, balanced way. I truly believe that when we take care of our bodies and nourish ourselves with the most nutritious and fulfilling plant based foods available to us at all times, then we are really able to reach our full potential and live life to its fullest.
