I am just going to be real with you today: you know that feeling when you are thinking to yourself (about doing something) mmm neah, I just don’t have the right mood today, maybe another day, but then, you get started on whatever that thing was, and then what happens, is by the end of it, that you are already feeling better about yourself, and your day. That is actually exactly how I am feeling like today, its true that I or we (me and my dogs) have been going through a lot lately, but this – the blog, which I absolutely love and keep coming back to (we are celebrating 11 years soon, as I started this virtual place as a home for myself and my passions in January 2015) so doing this blog post today is actually a good thing that I get to do for myself and for my passions.
I just love and adore the raw vegan lifestyle and every time I get to experiment with something new I am just super excited, curious and I just get to feel like myself again. Therefore I am going to share with you today a new healthy, delicious and nutritious recipe that I have recently tried and that you are absolutely going to love and adore! it tastes delicious, its super easy to make and its packed with good nutrition as well. Yummy!

Here are the ingredients that we are going to need in order to make this amazing creamy and tasty raw vegan apple cinnamon mousse that you can either serve as dessert or as a topping for a vegan cake or anything else that you might want to experiment, I actually served it as a weekend breakfast, it just brightened up my day, I have to tell you. So, there you go, please find the ingredients bellow:
2-3 apples – you can choose golden or red apples as they are sweeter in taste, but you can also experiment with any other types of apples if you wish
1 cup cashews – soaked for 1-2 hours to soften them a bit
1/2 cup dates – also soaked to soften a bit
cinnamon.
We blend these ingredients with 1/2 cup or more of water or nut milk, you can add coconut milk for a super creamy and rich consistency, and adjust this quantity accordingly to your desired level of thickness.
Then when our mousse is ready we can add now our beautiful raw vegan toppings:
coconut flakes/ chips
more cinnamon
nuts (whole or grounded)
raisins
any other spices or toppings of your choice.

Making healthy and fulfilling choices on a day to day basis is a habit just like any other habit and it requires repetition in order to became second nature, but as soon as our bodies and our minds get used to the new habit, then everything unfolds naturally, in a healthy, balanced way. I truly believe that when we take care of our bodies and nourish ourselves with the most nutritious and fulfilling plant based foods available to us at all times, then we are really able to reach our full potential and live life to its fullest.
