My All Time Favourite Salad Mix

I am super excited to be sharing once again (because its been a while honestly) amazing and super tasty, delicious and nutritious raw vegan recipes with you. There are recipes that I personally, not only love and that I have somehow kept their core ingredients constant over the years, but these are also recipes and recipe ideas that I have perfected over the years, as a matter of both added nutritional value and as a matter of fact, finding a wonderful balance between taste and texture, because, as we all know, the better it tastes the easier it gets to actually stick with the meal plan that we want to implement for ourselves.

Over the years I have tried going back and forth between mainly vegan and raw vegan (meaning a smaller or bigger percentage of what I eat on a daily basis is being raw vegan and the rest is vegan), and I have to say that I have found a balance that works for me. It is of course still shifting, changing and adapting to each phase and season of my life, as I navigate the winds of change, but it is a wonderful fit for me and it simply makes me amazing and joyful. As I live in a temperate climate, it’s realistic to say that it’s ok to be flexible and not try to be super high or high raw on the spectrum all the time. Its actually a very adaptive choice to find what fits you best, not only according to the market options that are seasonal and available throughout the year, but also stay flexible in mind and body when it comes to adopting these options and making them work for yourself as an individual.

Therefore, today I am sharing with you my all time favourite salad mix, you might have read about it before, or perhaps even tried it, but today I am also going to share what adjustments I am currently making to this basic model and why it works so well for me personally, both in terms of taste and texture as well as a matter of great nutritional value that is provided to the body by making these conscious choices. Here are basic ingredients for my favourite salad mix of all times:

mix of greens, like spinach, arugula, romaine and lots of leafy greens of all kinds

mix of veggies, like for example tomatoes or cherry tomatoes, bell peppers, as colourful as possible, cucumber, celery stalks, radishes and any other veggies of choice

tofu – classic or smoked or any other flavoured option if you preffer

avocado – as a wonderful source of healthy fats of course

salt, oregano, nutritional yeast, olives, lemon juice, olive oil.

Now what I recently, meaning in the last couple of years, started to also integrated into my salad as a great source of omega 3 fatty acids, which we need so much as a source of good fats, but usually we do not get enough from our diet, is a mix of seeds, grounded preferably for better absorption of the nutrients, by the body, this usually contains some flax seeds, hemp seeds, sesame or pumpkin seeds and as an extra boost for finer content I do include here some psyllium husk as well, and sprinkle it all with some flaxseed or hemp seed oil, also to boost the omega 3s and give it a nice nutty flavour. This also makes it not only more dense, from a nutritional standpoint, but it also contributes to increased satiety levels, and it kept us nurtured and nourished for a few good hours.

As you probably know already from my previous posts, I do personally use an intermittent fasting model on a day to day basis with two meals a day so this would actually be my lunch meal. I encountered this model many years ago, after trying and testing all kinds of things as eating patters, and this really made a huge shift for me and it still works amazingly, so two meals a day is for me the perfect way to nurture my body on a daily basis, but you do you and find what best fits your own unique preferences and needs.

Making healthy and fulfilling choices on a day to day basis is a habit just like any other habit and it requires repetition in order to became second nature, but as soon as our bodies and our minds get used to the new habit, then everything unfolds naturally, in a healthy, balanced way. I truly believe that when we take care of our bodies and nourish ourselves with the most nutritious and fulfilling plant based foods available to us at all times, then we are really able to reach our full potential and live life to its fullest.
