Well, I do know that I have written similar “What I Eat in a Day” posts before, but as things normally shift and change with time, and since I am committed to this December experiment, I have consciously decided to make this post a part of this months journey. Yu-hu! So this is also my basic model for daily meals while also encompassing the changes that I have encountered over the years in order to listen to my body and nurture and nourish myself accordingly. I do eat since a lot of years, probably around 10 or so years, two meals per day on a regular basis and then if I do occasionally feel like I need to change something, add an extra meal or a snack or something like that, I just do my best to follow my own body s inner guidance and do what best serves at a certain moment in time and space. Therefore I would say that I do my best to stay open minded, especially when it comes to uncertain circumstances, like going out, or traveling which are normally correlated with shifts in ones way of eating, and its not always perfect but I am for sure noticing some steady and grounded progress along the way. I have personally discovered and have experimented with fasting for many years now, and it is a great eating model, there are many models out there, you just have to find the one that works for you personally, and it adds lots of health benefits to ones overall health and wellbeing. It is definitely not a magic pill, but if used properly, it can bring lot of ease, health benefits and an overall joy into ones life so I would encourage anyone to try it (under medical supervision if needed, and in a guided environment if health issues are present).

Ok, so let’s see, what do I eat in a day? Well I like to start my day with a coffee, black tea or my absolute favorite (which I actually drink throughout the entire day) green tea. I love and adore green tea, matcha tea and above all green jasmine tea. This is just a blessing, its a feeling of cozy, safe, space, guided and protected, its just the place to be for me, and I just noticed recently that not only is green tea great and has amazing health benefits, but I have also conditioned myself (after many many years of it being my safe space and place to go to no matter what) to actually make a shift and feel at least a bit better, by simply drinking a cup of tea. It’s amazing how our bodies and our minds work in perfect harmony with each other and make us desire the healthy things, the things that are actually good for us and our amazing bodies. So, yes I do start my day with that, and then (lets say I normally wake up around 6-7 in the morning) I would have breakfast (which is actually like a brunch so to speak, when we look at it from an hourly perspective, but I just call it breakfast) somewhere around 10-12. I love a mix of fibre goodies and good healthy fats with lots of omegas to fuel my brain for the day and a bit of sweetness, but not too much of it, in order to avoid insulin spikes or sugar crushes (so there would be somethings like oat flakes, chia seeds, a mix of flax, sesame seeds and many other seeds of choice, some berries, coconut flakes and other goodies). I honestly do not really so much on smoothies for breakfast anymore, only perhaps if I do make them really filling, and if I so have a smoothie I also need something solid like a raw vegan bar, preferably home made, but nowadays there are also lots of healthy balanced options out there on the market as well so its pretty easy to find a solution to take on the go as well.

Then, for my second meal of the day, which I call lunch, even though from an hourly perspective, again, it would be somewhere in between lunch and dinner for most people, I just call it such, somewhere between 4 and 6 pm. I usually have a big salad with lost of veggies and greens and then some healthy fats like avocado, flax oil, again a mix of seeds for fibre and omegas, and of course some healthy proteins to balance the meal, which would be in my case tofu, legumes (of course, cooked) or all kinds of nut spreads, like a cashew or almond spread made with a mix of spices, lemon juice and so on. And I do enjoy a good dessert, I have kept this over the years, just adjusting the sweetness and the nutritional composition of it, as in order to make it more filling and nutritious, therefore dessert would either be raw vegan bar or cake, or just simply a mix of dried fruits like dates, coconut and some nuts, or perhaps some nut butter spread on top of some rice cakes, there are many other options of course, but those are simply my go – to all time favourites. I might enjoy another cup of coffee in the afternoon, regular of decaf, and as I previously mentioned I just do my best to dry plenty of water in order to stay hydrated throughout the day, and I absolutely love teas of all kind, but of course my favourites are green tea regular and green tea with jasmine. Simply Yum. Sometimes I would also add to my lunch some cooked cereals, like jasmine rice, which I think is just divine goodness, or sometimes I would indulge in a vegan decadent brownie, also yum as brownies are my all time favorite desserts of choice and other subtle shifts that are also great especially when living in a temperate climate and wanting to eat locally and sustainable as much as possible. It’s not about being perfect sure, but about doing our best in order to heal ourselves properly and nurture ourselves with love, ease and grace.

Last, but not least, from time to time, probably on a monthly, or every other two weeks or so, I would enjoy something like a vegan pizza or a veggie burger or anything like that, I do try to be mindful here as well, while also giving myself freedom to choose and act accordingly. There is also of course women, and men as well, will most like know and understand this, the sensitive time of the month when we are, generally speaking craving either salty or fatty foods, or perhaps lots of sweets and so on and so forth, so that is why it gets even more important to be flexible in ones mind and body, as we go through those monthly hormonal changes, we do have different body and intake needs, and it is of course, not supposed to look all the same all the time, there are many wonderful books on this theme so I gently recommend that you look out for more infos it you are interested in this topic. Also, the model that I use on a day to day basis is basically and intermittent fasting model, with a window of 6 – 8 hours in between meals, and with a window, including overnight rest and sleep of approx 16 hours, but as we know, intermittent fasting, or time restrictive eating is not for everyone, and not a model that works forever, you have to simply try and find out what works for you. When it comes to myself personally, I was never into eating 4 – 5 times a day or snacking, and eating twice a day on a regular basis was just the best solution that I could find and continues to work wonderfully for me up to this day, but, as I previously mentioned I do keep an open heart and open mind to my body s needs and wants and try to stay as flexible as possible.
