Super Simple Veggie Soup

As a second part of this weeks topic of listening to our bodies, I would like to share with you today a super simple and of course, delicious and nutritious soup recipe, that is just great for the body as well as the mind. Its just super refreshing, easy to digest, you can make it with seasonal or frozen ingredients, I have chosen frozen for mine and it is just super easy and simple to make, providing nutritional value as well as great hydration for our amazing bodies.

For this super simple veggies soup recipe we are going to need the following ingredients:

mix of fresh or frozen veggies, you can find pre-made mixes specially designed for soup (I used one of those for mine, it contains the following ingredients chopped parsnip, carrots, potatoes, onions, zucchini and another pack with peas and carrots)

some chopped or squeezed tomatoes or tomatoes juice, I just wanted mine to taste like tomatoes soup, which I absolutely love and simply adore.

We allow the ingredients of the soup te be cooked with the preferred method of choice, here it could be boiling or just a slow cooker perhaps.

When the soup is ready we can serve it as it is or garnish it with some fresh of dried herbs of choice like oregano, basil, I personally even added some chopped tofu on top to add a little bit of protein to the mix as well. We can also blend it and turn in into a creamy soup, or just leave it as it is. It just tastes absolutely refreshing and divine. Yum!

I truly believe that when we take care of our bodies and nourish ourselves with the most nutritious and fulfilling plant based foods available to us at all times, then we are really able to reach our full potential and live life to its fullest.
