Super Simple Veggie Pasta

Today I am going to share with you a super simple and delicious as well as nourishing and nutritious recipe for veggie pasta. I have been experimenting more with the vegan side, so to speak of my raw vegan lifestyle, exploring new options and food combinations as well as keeping an open mindset along the way. I do believe that when it comes to health and overall wellbeing balance is the key word here, meaning we do not have to do it all, or do it perfectly or even (my opinion) stress ourselves about the purity of some ingredients from our meals, as long as we keep an eye on an overall balanced intake of nutritious and healing foods, of course we can from time to time indulge in other food choices that may not be so much on the nutrition side of the spectrum, but they still feel good to be indulged from time to time. And today’s recipe is a great example of that. I think that by mixing the right ingredients we can make any recipe a bit more nurturing and nourishing, even if it is comfort food and just enjoy the dinning experience as a gesture of self care and self love. YUM!

Here are the ingredients that we are going to need in order to make this super simple veggie pasta recipe:

some (cooked )pasta of choice, whichever option you prefer is great, you can also go gluten free if gluten is a deal breaker for your overall wellbeing and health.

for the sauce / toppings: I used a mix – from the store, it was actually for curry, and I found it to be super tasty on the pasta as well, some chopped avocado, chopped bell pepper (cooked) and carrots (cooked) and a super tasty and delicious pasta topping, made with nutritional yeast and cashews that just gave it a vegan cheesy flavour making it super delicious and giving it a wonderful texture as well.

I also added some flaxseed oil for some good fats and a great source of omega 3, contributing as well to the wonderful texture of this dish and finally topped the plate with some condiments: dried basil and oregano.

This recipe can we served right away, hot or cold, I personally love both options, or you can just prepare the pasta, store them for 1-2 days and add the toppings when serving to simply get the right consistency and texture. If you do you decide to serve it latter, or make multiple servings for later as well, there is going to be a little difference in the texture and hardness of the pasta, but it will still taste wonderful.
