Raw Vegan Bruschetta / Pizza

I know, I know it looks mostly like pizza, but when I started out making this amazing, super nutritious and delicious recipe, I have had the idea of a bruschetta recipe in mind. But since I made the base “pizza” like it actually looks more like a pizza slice than a bruschetta. Still, I decided to share it with my initial intention in mind, and let you decide which one of the two is going to be it for yourself when you test this super tasty recipe. Its also a pretty versatile recipe, it can be made raw vegan or vegan and it still tastes amazing, the only difference is the way in which we decide to prepare the base, we can either dehydrate it by using a professional dehydrator, and keep it raw, but this is going to be time consuming, as it usually takes a couple of hours to get the right texture, or make it vegan, by dehydrating it in a regular oven. This is going to save you time and the most important thing, it is still going to be a super nourishing and a super nutritious recipe, no matter how you decide to prepare it after all. This is also a gluten free recipe, so if gluten is an issue for you personally, Ive got you!

Bellow are the ingredients that we are going to need in order make those super delicious pizza slices / bruschettas:

Base Layer:

a mix of seeds 1 / 2 cup

millet flakes or grounded flour 1 / 2 cup or more if needed

olive oil, salt, spices of choice

a little bit of water.

We use a food processor to mix all the ingredients together until we get a thick and sticky consistency, and then we spread it onto a baking sheet and prepare it by our method of choice: dehydrating in the oven or in a dehydrator until it gets crispy and has a super crunchy consistency. Yum!

For the sauce, we are going to use the following:

1 medium tomato

dried tomatoes 5 – 7 pieces

walnuts 1 / 2 cup

lemon juice (juice of 1 big lemon)

water (as much as needed to reach the desired consistency)

nutritional yeast 1 – 2 tbsp

We use a blender and blend all the ingredients together until we get a smooth and creamy consistency, at the end we can also add some olive oil for even more goodness and a tasty touch.

For the toppings:

parsley

dried tomatoes

nutritional yeast flakes

kalamata olives.

Here you have the freedom to actually choose whichever toping you prefer. Embrace your creativity and just go with the flow! When all the layers are ready, we can prepare our pizza / bruschetta slices and we can either serve them right away, or keep them in the refrigerator for up to 2 days.
