I have been feeling a little bit off lately. Heartbroken. And stuff like that. Therefore, since I am on vacation this week, I have decided to cheer myself up with a raw vegan cake, and by going to a double pilates session a bit latter today. Yes! That’s the spirit! Last weekend, my family came to visit me, and they brought me some super cute flowers, pink tulips, I absolutely adored them and I very much enjoyed them every single day since the moment I received them. I used to say that I don’t like / want flowers, but as I turned 34, exactly one week ago, I just made a conscious choice, that from now on I do like flowers and I do want flowers, and then, the next day, I just got the flowers from my family. It’s just amazing how the Universe works so fast, especially when it comes to the right people and the right contexts that simply make us thrive.
Therefore, this week I have simply embraced coming back to my raw vegan roots and trying out all kinds of delicious recipes just to cheer myself up. Just because some things break and are not functional in the long run doesn’t mean that we have to stay (heart)broken. It’s ok to feel our feelings, create a safe space for our emotions and of course integrate and process our emotions properly. With time and patience, it all gets better eventually. People come and go, hurt us and leave, tell they want to build something with us and then they act emotionally distant, but there is nothing that a good old raw vegan cake can’t heal.

As a matter of fact, when I started writing for the blog, I was in the middle of my worst heart break ever, and at that point it was all very messy and complicated as we were also living together, last guy, that I ever lived with, I know quite dramatic, that was back in 2015 and it did feel like a lot, I did tried something temporary at a latter point in my life, but that didn’t work either, therefore, Ive just decided that independent living is the best choices for me personally. And I am deeply grateful for that choice ever since. One of the best break through moments of my life, actually. And then, of course adding two dogs later on in my life, it just makes it all so much easier. So, I guess, in the end, it all works out for the best.
Do I feel lonely at times? Of course, especially since I’ve been manifesting some codependency tendencies in the two relationships that lasted for the longest and I got really attached to each one of those guys, but the point here is, I am celebrating being single again, and there is no better way to do it than with this amazing, super nutritions and delicious raw cake. I’m sharing all this today, simply because its not always easy to find balance in our lives, but sometimes, taking a deep breath, exploring some passions or hobbies of choice can make us feel better and support our own healing and growth process. Therefore for all the recently heartbroken people out there, and for the ones that are not currently heartbroken, but actually thriving in their relationships, please find bellow the ingredients that we are going to need in order to prepare this amazing, super simple and easy cake recipe.

For the base we are going to need:
1 / 2 cup dates
1 / 2 cup mixed nuts or nuts of choice
1 – 2 tbsp carob / cacao powder
2 – 3 tbsp coconut oil.
We use a food processor to mix all the ingredients together until we get a sticky and thick consistency and then, when it is ready we can prepare our cake base.
For the berries filling / cream we will use:
1 / 2 – 1 cup of cashew, depending on the desired consistency
1 cup berries fresh / frozen
sweetener of choice
2 – 3 tbsp coconut oil
cinnamon powder
1 / 2 cup coconut milk.

We use a blender to mix all the ingredients together until we get a smooth and creamy consistency and then when it is all ready, we can add it on top our cake base. Finally we can add some more fresh / frozen berries on top of it and allow it to harden for a few hours in the freezer. When it is ready we can take it out, cut into slices of choice and serve right away. Raw vegan cakes are best kept in the freezer, and then when we desire to enjoy a slice of them, just leave them at room temperature for a little while and serve. Yum!

Making healthy and fulfilling choices on a day to day basis is a habit just like any other habit and it requires repetition in order to became second nature, but as soon as our bodies and our minds get used to the new habit, then everything unfolds naturally, in a healthy, balanced way. I truly believe that when we take care of our bodies and nourish ourselves with the most nutritious and fulfilling plant based foods available to us at all times, then we are really able to reach our full potential and live life to its fullest.
