Salads are probably one of my all time favorite foods. Still, I realised recently that I have neglected my greens intake, and of course greens are healthy in general, be them in smoothies or salads and any other recipes, but for me personally, greens just make me feel good. I just love and adore not only green smoothies, which are amazing, but also all kinds of salad mix recipes filled with colours and diverse textures and filled with good nutrition too. I think that many people probably see salads as something boring or that is not going to make them feel satiated for long, but the truth is, that, when the proper ingredients are combined, they can actually make a simple salad a powerful boost of energy as well as a super filling and nutritious recipe.
Therefore, today I am going to share with you my salad recipe for the day, it is super easy and simple to make and it is also super filling and nutritious too.

Here are the ingredients that we are going to need for this salad mix:
1 medium cucumber chopped
1 / 2 tofu sliced
1 big tomato sliced
1 handful of baby spinach
a few fresh basil leaves
olive oil
a pinch of salt
lemon juice (1/2 lemon – 1 lemon)
1/2 red bell pepper chopped
2-3 tbsp hemp seeds

We mix all the ingredients together into a bowl of choice, and then, when done, we can serve right away. The mix can also be kept in the fridge for about 24h, but just keep in mind to add the olive oil only when you are serving it in order to avoid making it loose its fresh look. Enjoy!
